According to Wikipedia, HAGGIS "is a dish containing sheep's 'pluck' (heart, liver and lungs) minced with onion, oatmeal, suet, spices, and salt, mixed with stock, and traditionally simmered in the animal's stomach for approximately three hours. Most modern commercial haggis is prepared in a casing rather than an actual stomach."
According to me, it means some good old fashioned Celtic Festival and Highland Games! Thanks to my sweet hookup to the website developer for UtahScots.org, I had a chance to photograph this summer event. Now I may not be Scottish but attending events like these makes me wish I was. I can't display pictures of faces without permission, but this is another one of those exciting events where the props (and people's backs, wink) are enough to tell the story!
